Hey Good Lookin'! Whatcha Got Cookin?

Guess what?! My work had a recipe contest recently, and to get people to submit recipes, they said that the first 50 people would receive a free jeans day sticker. I totally wanted to wear jeans, so I hurried and submitted my Mahi Mahi Tacos with Fresh Mango Salsa recipe. It's a favorite of Jamie and I's. They taste so good, and it's such the perfect summer meal! The trick to submitting though, was your recipe had to be heart healthy. The yummiest and the most healthiest recipes would be announced the winners. There were three areas to submit: salad/side dish, entree, and dessert. Well, come to find out after a came back from grandpa's funeral, that I had first of all won a free jeans day sticker, and second of all, I won the entree category as the 1st place winner! So, since I won first place, my work will be catering a meal with all the first place dishes to 10 people of my choice next week! Plus, today, they featured it on their menu. I purposely didn't bring a lunch today so I could taste test my recipe, just to see how good they followed my recipe. When I got there, they were all sold out! Not even a snitch left! Nothing! Nadda! I was a little ticked at first... but then, took it as a compliment. Atleast everyone liked them! The server said that the line was ridiculously long, and that everyone was raving about them! He then went on to say that they will definately be adding my dish to the regular menu, because everyone liked them so much! I can't believe I won! I didn't think I even had a chance, seeing that there are about 2,000 people that work there, and the majority are women! So, there you have it. I'm officially a chef! Not really... but it is pretty cool that I won! So, here's the recipe if you wanna give it a shot! Let me know how it turns out!

Recipe Name: Mahi Mahi Tacos with Fresh Mango Salsa

Introduction: This quick and easy meal is light and refreshing for those hot summer days!

Prep Time: 30 minutes
Servings: 4
MANGO SALSA
Ingredients: 6 champagne mangos (diced in small bite pieces)
2/3 c finely chopped onion (by hand)
2 c chopped cilantro (by hand)
1/3 c finely chopped red bell pepper (by hand)
1 small jalapeno (for spicier taste, add veins and seeds) finely chopped (by hand)
2 cloves garlic
¼ tsp salt
¼ tsp pepper
Juice of 1 lime
2 Tbl water
2 tsp red wine vinegar
¼ tsp sugar

MAHI MAHI TACOS
2-3 filets mahi mahi
Salt and pepper to taste
1 tsp Olive oil
8-10 small white corn tortillas
½ c chopped onion
1 c chopped cilantro
1 avocado (diced)

Preparation:
MANGO SALSA: Mix together mangoes and vegetables. Add salt and pepper. Remove about 1 cup of mixture and place in blender. Add lime, water, vinegar and sugar to mixture in blender. Chop until almost pureed. Add to mixture in bowl and mix all together.

MAHI MAHI TACOS: Heat skillet with olive oil. Add fish and cook on each side for about 3 minutes. Shred with fork while in pan (should be very tender.) After shredding, add salt and pepper to taste and continue on low heat for another 3 minutes.
Heat up corn tortillas on another skillet (do not use oil).

Garnish your tacos with mahi mahi, fresh mango salsa, fresh onion, fresh squeezed lime, fresh cilantro, and chopped avocado. YUM!

If I liked fish I'd be all over this - that is awesome you won! Congrats! Maybe I'll make it for Kash - he enjoys fish!

Sounds like you are going famous! That is so dang cool you won 1st place!!! You are such gourmet chef. When you made the salsa at mom's we all LOVED it so I'm sure that it would be great on fish tacos! Go, LINS! P.s. Marc and I are definitely going to be trying these;) Love you!

definitely trying it. dude, you are working in the wrong industry. Maybe you should explore in something like that.
